French Onion Soup
This French Onion Soup recipe is some good! It takes a bit of time to prepare because of the slicing and cooking of the onions, but it’s certainly not onerous. Topped with toasted French bread and grated Swiss cheese it certainly warms your belly!
Ingredients:
- About 2 pounds yellow onions, sliced
- 1 T olive oil
- 2 T butter
- 2 cloves chopped garlic
- 1 pinch salt
- 1 tsp dried thyme
- 4 cups beef stock
- 1 tsp Dijon mustard
- 1 Tbsp balsamic vinegar
- ½ tsp Worcestershire sauce
- Salt and pepper to taste
- 4 slices French bread
- 1 cup grated Swiss cheese
Instructions:
Melt butter and olive oil together over medium heat and when it is hot add the onions. Stir together so everything is well coated. Add a pinch of salt and the thyme and cook for about 10 minutes.
Stir in the garlic and continue to cook for about 20-30 minutes on medium to low heat to prevent rapid browning. When the onions are done, add the beef stock, mustard, balsamic vinegar and Worcestershire sauce. Bring to a boil and then turn heat to low and cook for approximately 10 minutes. Add salt and pepper according to personal taste.
Toast the slices of French bread either in toaster or under broiler. Pour soup in French Onion Soup bowls, place the toasted bread on top and then sprinkle with Swiss cheese. Put bowls in oven under the broiler to melt the cheese (it should look brown and bubbly). Keep your eyes on it – it only takes 2-3 minutes!!!
