Beef Fajitas with Lime
These beef fajitas are quick to make and a hit with everyone. The beef is infused with a lovely hint of lime. I think this marinate would be equally delicious with chicken.
Ingredients:
- 1 lb sliced steak
- 2 tbsp olive oil or coconut oil
- Lime juice from one whole lime
- 1 clove garlic, minced
- 1⁄2 tsp chili powder
- 1⁄2 tsp cumin
- ½ tsp salt and pepper
- 8 inch tortillas
- Sliced onions and peppers of your choice
Toppings:
- salsa
- sour cream
- guacamole
- shredded cheese
- chopped tomato
Instructions:
In a skillet, heat the oil on medium high and cook the marinated steak until done. I find the longer it simmers, covered, the more tender it becomes. Meanwhile, in another skillet, cook the sliced onions and peppers and then set aside.
To assemble, warm the tortillas. Put the steak, peppers and onions, and toppings of your choice on top of each tortilla. Wrap it up and enjoy!
