Chocolate Covered Strawberries
Oh how I love chocolate. If you’ve read this post, you will know about my true chocolate indulgence. But, good old chocolate chips once in a while can fit the bill too especially when mixed with coconut oil and coated on fresh strawberries!
I made these delicious morsels for a fundraiser for my son’s end of year music concert. They are not only delicious and present beautifully, they are quick and easy to make. Follow the directions as written and you too will be a star when offering your loved ones these “healthy” treats!
Chocolate Covered Strawberries
Ingredients:
- 2 clamshells of fresh strawberries (about 2 pounds in total)
- 1 ½ cups milk or dark chocolate chips (I used milk chocolate chips)
- 3 teaspoons coconut oil
Instructions:
Line a rimmed baking sheet with parchment or wax paper. Wash, and dry strawberries well to ensure that the chocolate adheres perfectly to the strawberries. Sticking a toothpick in the top of each strawberry makes it less messy when dipping the strawberries.
Measure out chocolate chips in a microwave safe bowl and scoop coconut oil on top. Adjust the power setting on the microwave to 50% and cook for 2 minutes. Stir until smooth.
Dip each strawberry into the melted chocolate. Place chocolate covered strawberry onto the lined baking sheet and place into the freezer for 15 minutes so the chocolate can set. Remove from freezer and put in fridge until ready to serve.
FYI: I found this recipe from “Add a Pinch” website and didn’t need to change much. Perfection at its finest!
