Stove-Top Chocolate Pudding

For an after-school snack, or when you are craving something chocolaty (without much sweetener), here is a simple, protein rich, yummy treat that is sure to satisfy the taste buds of any age.

Ingredients:

2 cups milk
3 Tbsp. maple syrup
2 Tbsp cornstarch
2 Tbsp cocoa
2 well beaten eggs
1 tsp vanilla

Directions:

Heat milk in a saucepan or double boiler over medium heat and add maple syrup. Mix together cornstarch and cocoa and whisk into hot milk, stirring constantly as it starts to thicken. Quickly whisk ½ cup of hot liquid into beaten eggs and then pour into saucepan, whisking so eggs do not clump. Continue to stir and cook until thick. Add vanilla. Pour into small dessert bowls or fruit nappies.
