Dusty’s Cabbage Soup Recipe
This wonderful fall soup is made often in my home and even though I often tweak recipes to appeal to me and my family, I have not ventured far from Dusty’s original recipe.
Dusty Demoe is mother to my wonderful friend Dave Demoe (Godfather to my boys), and was a very special lady. Aside from raising 4 kids on her own and working full time, Dusty always managed to keep a huge garden and make preserves like salsa sauce, Indian relish, jams and many other things for her family. May you rest in peace Dusty, knowing there are many people enjoying your delicious cabbage soup!
Ingredients
1 lb. ground beef
1/2 cup diced celery
1 med. onion
1/2green pepper chopped
2 Tbsp sugar
1/2 tsp. paprika
2 – 5.5 oz cans tomato paste
2 cups diced potato
1 28 oz. can tomatoes
6 cups hot water 3 tbsp. chopped parsley
1 cup diced raw carrot
6 -7 cups coarsely chopped cabbage
1/4 tsp basil
1/4 tsp. oregano
salt and pepper to taste
Instructions
In large soup pot or dutch oven, sauté ground beef, onion, celery, and green pepper. Add remaining ingredients except cabbage and simmer for 1 hour, uncovered, stirring occasionally. Then, add cabbage and simmer covered for one hour longer.
